HAAS Cabernet Sauvignon
The 2021 vintage delivered one of the Cape’s finest harvests in recent memory — marked by cool nights, mild daytime temperatures, and slow, even ripening. These ideal conditions have given rise to Cabernet Sauvignon of precision, purity, and classic varietal expression.
A deep garnet hue hints at the concentration within. The nose is layered and expressive, offering blackcurrant, blackberry, and mulberry, interwoven with notes of pencil shavings, tobacco, and a subtle hint of mint.
On the palate, the wine is structured and focused, with firm yet ripe tannins framing flavours of dark berries, cedar, and cocoa. A vein of bright acidity gives lift and definition, while judicious oak ageing brings hints of vanilla, graphite, and savoury spice.
The finish is long, dry, and mineral-driven, promising excellent ageing potential and graceful evolution in bottle. This wine is ready to drink (after decanting) but will age well for many years to come.

Harvest
Grapes were manually harvested on 26 February at 25.1 Brix, allowing for optimal phenolic ripeness.
Winemaking
Alcoholic fermentation took place in open-top fermenters for 14 days on the skins and with punch downs three times a day. After fermentation, the wine was pressed and underwent malolactic fermentation in stainless steel tanks. After malolactic fermentation, the wine was racked to barrel and matured for 18 months in 100% new French Oak barrels of 300L and 500L.
